CHOCO DONUT


Recipe Choco Donut :
275 gr Bread Flour
25 gr milk powder
6 gr instant dry yeast
100 gr potato, steamed that potato then mashed,
50 gr sugar
40 gr butter or margarine
1/4 teaspoon salt
1 egg yolk
40 ml cold water (adjust as necessery)
less than 1/4 teaspoon salt baking powder (less 2,5 gr, dont use baking powder too much, making the donut not soft after one day, optional, can be ommited)


Water roux paste :
10 gr bread flour
50 ml water

How to make it :
For water roux paste you can follow this instruction
For the Dough :
  1. Put dry ingredient like flour, milk powder, instant dry yeast, sugar to bowl (I used stand mixer with a dough hook to kneading the dough), mix them with mixer, push the button to number one (or lower level), add egg, water roux, mashed potato, and gradually add cold water to form a dough , push the button to number two (try to add just 30 ml water and see how a dough formed about 10 minute, if lack of water, add water again), wait until the dough smooth, approx 5-10 minute, the last add butter and salt, mix them till a dough smooth and elastic about 10-15 minute. Many Bakers said that at this step, take out a part the dough then pulled and streched, if a dough become membran, it's called elastic, or finish the mixing/kneading.
  2. Rest dough for 30 minute untill double in size, punch it down, roll it and divide into 30 gr per portion and shape it like a ball. Rest for 10 minute, then roll again, form a dough with donut mold.
  3. Rest again for 20 minute, and fry it with low heat. Put shortening into oil, it is usefull to make the donut not oily.
  4. Topping : Cook water at saucepan till 40 degree celcius (see the air bubble come out at first time and turn off heater) and put in smaller saucepan which fill chocolate block sliced, mix it till liquid and take aside. Dip the cool donut into topping. You can create white chocolate line to the top donut like as seen my photo.
  5. Enjoy donut after topping hardened
